    ORGANIC HUTTERITE SOUP BEANS

Hutterites are beloved beans with a delectable buttery flavor that hold up well to long cooking despite a firm but creamy texture, making them ideal for soups. Hutterite Soup Beans came to the U.S. from Russia via Austria in the 1870s with the Hutterites, a pacifist and communal Christian sect who migrated to escape religious persecution and settled in the Dakotas. During World War I them migrated again to Canada when the US government would not grant them exemption from fighting in the war due to their religious beliefs.

    WHAT TO DO WITH THEM

As their name implies, Hutterite beans are great in soups and stews of all kinds. I'm savoring these pale yellow beauties in a velvety Vegan White Bean Corn Chowder using frozen corn to remind me of summer's bounty in the dead of winter. They would also be an excellent choice for a Creamy Roaste Cauliflower Soup with zesty za'atar. Finally this Pressure cooker Heirloom Bean and Parmesan Bean Soup is a great choice for pretty much any heirloom bean. It's my go-to easy weeknight winter meal.

    SOUTHWEST RED BEANS

Rooted in tradition yet adapted for today, Southwest Red Heirloom Beans honor the legacy of the cherished Anasazi bean while embracing modern resilience. Bred by UC Davis to withstand mosaic virus and thrive in contemporary growing conditions, this vibrant red bean ensures the continuation of a storied lineage.

Rich in flavor and history, Southwest Red Heirloom Beans create a delicious, velvety bean broth with a bold, meaty depth that elevates soups, stews, and chilis. Whether slow-simmered for a hearty meal or used in plant-based recipes, their robust character and creamy texture make them a staple for any kitchen.

    WHAT TO DO WITH THEM

The delicious flavor of these beans really shines in simple preparation like the Anasazi Frijoles de la Olla . Juniper berries are a common ingredient in indigenous cooking so we're crushing on this recipe for Anasazi Beans with Juniper Berries.  The anasazi goes particularly well with southwestern food which is why we'll be making this southwestern vegetarian chili for hearty evening meals.

    ABOUT THE FARMER

These beans come to us from Primary Beans, a wonderful company that we love working with. They are one of the few exceptions we make in our commitment to work directly with farmers and that's because we have very much aligned missions to support small, local farmers and pay fair prices. These gorgeous organic beans are grown by the regenerative pioneers, Earnies Organics. Earnie's Organics is a charming and thriving organic farm located in the picturesque state of Idaho. Nestled amidst rolling hills and verdant landscapes, this family-owned establishment has been committed to sustainable farming practices since its inception. CRACKED FARRO PORRIDGE

We are excited to offer you Bluebird Grain Farm's most popular grain as a versatile cracked grain. Winner of the Good Food Award, don't let the porridge name fool you, it's not just for breakfast! Used in Northern Italy as a savory porridge, this milled-to-order Organic Cracked Farro Porridge is a nutritious whole-grain cereal that can be used as a hot cereal or prepared polenta-style with fresh herbs and roasted vegetables or roasted meats.

Emmer is a type of farro (an ancient hulled wheat) that dates back to early civilization. Grown organically in the Pacific Northwest using regenerative farming methods, it has 28 chromosomes and predates Spelt. Cracked in a fine grind from signature whole-grain Emmer Farro, this porridge is an excellent source of protein, fiber, phosphorus, and trace minerals. It is naturally sweet, rich, and nutty, with a creamy texture.

WHAT TO DO WITH CRACKED FARRO PORRIDGE

This makes excellent veggie burgers, savory sides and delicious warm porridge for chilly fall mornings.  When combined with savory seasonings it becomes a vegan meat substitute in our stuffed pumpkin recipe.
