We've all bean there. You get the beans cooking and then you get distracted. You end up with a pot of beans that are falling apart and mushy. So long to that salad you were making! Time to turn that pot of beany goodness into some refried bean magic. Hello burritos, tostadas and bocoles! Here's my favorite easy recipe to turn disaster into delicious.

Saute the onion and garlic in a sauce pan with avocado oil over medium heat for 2-3 minutes until softened.
Strain the beans (reserving the liquid) and add the them to the pan. Add cumin. Cook for 5 minutes.
Mash the beans with a potato masher or the back of a fork, adding some reserved bean liquid if needed to reach your desired consistency. Taste and add salt and pepper as needed.
Use in tacos, burritos and your other favorite recipes or add lime juice, jalapenos and cilantro and serve as a side dish.
Refried beans freeze amazingly well. If you aren't going to eat them in the next few days put them in an air tight container and freeze for up to 6 months.
