Pair it with creamy white beans, and you’ve got a nutrient-packed spread that’s as versatile as it is delicious. Seriously I could just get out a spoon and eat it right out of the bowl. Whether you’re slathering it on toast, dipping fresh veggies, or spreading it on a sandwich, this Green Goddess White Bean Spread will elevate any meal with its bright, fresh taste.
While canned beans are convenient, cooking dry beans from scratch results in a far superior flavor and texture. Dry beans have a creamier consistency when properly cooked, allowing them to blend into a smoother, richer spread. Make this vibrant Green Goddess White Bean Spread with creamy heirloom cannellini beans, fresh herbs, peas, and tahini. A protein-packed, spring-inspired dip that's perfect for toast, veggies, or sandwiches! Easy, healthy, and full of flavor.

1 cup dry cannellini beans
4 inch strip of Kombu
1/3 cup packed fresh basil
zest of one lemon
Cook the Beans – Place the beans in a pot with enough water to cover by at least two inches with 1 tablespoon of kosher salt and a 4 inch strip of Kombu (optional). Bring to a boil, then reduce to a simmer and cook until tender for about 90 minutes, or until tender. (Or pressure cook on high for 30 minutes) Drain and let cool.
Blend It Up – In a food processor or blender, combine cooked white beans, peas, parsley, basil, mint, chives, lemon juice, garlic, olive oil, tahini, salt, and pepper.
