This is the ultimate easy bean recipe, transforming protein-rich heirloom tepary beans and simple pantry ingredients into a satisfying meal in under 10 minutes. When I just don't feel like cooking, this white tepary bean romesco on toast delivers big flavor with minimal effort. I always keep cooked beans in my refrigerator and freezer precisely for moments like these - when hunger strikes but cooking feels like too much work.
There's a particular comfort in opening the refrigerator to find containers of pre-cooked beans waiting to be transformed into a meal. I cook heirloom beans in bulk and then freeze them in repurposed takeout containers, creating an instant meal resource for busy days. A pro tip: freeze beans in their cooking liquid to prevent freezer burn and preserve that liquid gold that adds depth to any dish you create. This simple practice becomes a culinary lifeline when hunger strikes and time is scarce. Oh, and don't forget to label them before freezing, I've had more "mystery bean" in my freezer, they seriously all look the same once they're frozen in liquid.
Tepary beans, with their rich history rooted in indigenous agricultural traditions, stand as silent sentinels of our culinary heritage. These resilient legumes, cultivated to thrive in the harsh conditions of the Sonoran Desert by native communities, are being rediscovered for their incredible nutrient density. In these tiny beans is packed far more protein than your typical bean. The desert is not a place of abundance, what the Indigenous people knew was that what they ate had to give them a lot of fuel The tepary bean's exceptional drought tolerance and distinctive nutty flavor make them a prized ingredient worth seeking out, although this recipe welcomes substitutions like cannellini or whatever beans you have on hand.
At the heart of this recipe lies romesco, a vibrant Spanish sauce that brings together the smoky sweetness of roasted red peppers with the richness of almonds and olive oil. This sauce comes together in mere minutes yet delivers complex flavor profiles that elevate anything it touches. This recipe makes enough romesco for several meals. I keep leftovers in the fridge for a few days or freeze them for future use. You could cut the recipe in half and that leftover jar of roasted red peppers can easily find its way into pasta tomorrow night. (Beans would go great in that by the way).

Strain the tepary beans from their cooking liquid and rinse briefly.
Add all of the ingredients for the romesco to a blender and blend on high until smooth.
Toast the bread. Spread romesco on the toast.
In a bowl, combine the beans with about half a cup of the romesco, adding more if needed, and pour the beans over the toast.
Sprinkle with flat leaf parsley and serve...or eat over the sink, we won't judge.
