The Ark of Taste Book By Slow Food USA

This visual encyclopedia for curious eaters features the stories of how some of these American products almost didn’t reach our table, with recipes from Slow Food chefs and profiles of growers from around the country.

Long House Hominy Grits By Dave Smoke McClusky (page 63)

Mohawk chef, Dave Smoke McCluskey crafts hardwood ash washed hominy from heirloom corn in small batches and mills it to order to create his famous Longhouse Hominy Grits. There is so much soul and history in these Longhouse Hominy Grits. Chef McCluskey calls them "grits" because it's more recognizable, but the Haudenosaunee (Iroquois) call them “Mush."

Organic Rio Zape Beans (page 219)

Beloved by chefs and revered as "the noblest bean" by The Washington Post, this 100% organic heirloom bean club exclusive comes to us from family owned Fifth Crow Farms. The Rio Zape is a very special bean, so special it's in the Slow Food Ark of Taste! Rumor has it that the bean was unearthed in the ruins of the Anasazi cliff–dwelling people in the American southwest.
