Preheat oven to 350°F. Line a 9×9 baking pan with parchment paper, leaving some overhang for easy removal later.
Combine oats, almonds, and coconut flakes in a large mixing bowl.
In a small saucepan over medium heat, melt the coconut oil. Stir in the almond butter, honey, almond extract, and salt until smooth and well-blended.
Pour the warm mixture over the dry ingredients and stir until everything is thoroughly coated.
Transfer to your prepared pan and spread evenly. Place another piece of parchment on top and press firmly with a flat-bottomed measuring cup or spatula to create a compact, even layer.
Bake for 15 minutes, just until the edges begin to turn golden. Remove from the oven and transfer directly to the refrigerator to cool completely for at least an hour.
Once fully chilled, use the parchment overhang to lift the entire block from the pan and cut into bars with a sharp knife. Store in an airtight container in the refrigerator for up to three weeks. While these bars are technically shelf-stable, they hold together better and are less messy when kept chilled.
