    Ayocote Limited Edition Set

PRE-ORDER NOW. Medianoche is currently sold out but we expect it Mid-November. This season we’re pairing two of the rarest beans we carry — and we honestly don’t know when we’ll be able to offer this pairing again. A severe drought across the Puebla highlands has put next year’s Ayocote Arcoiris harvest in real doubt, and our Medianoche, already impossibly scarce, will be even harder to come by. Both are heirloom Ayocote beans grown the old-fashioned way on small family farms, with no synthetic fertilizers, pesticides, or glyphosate — once this set sells out, it may be a year or more before it’s back.

Medianoche is a striking mix of deep black, purple, and cream beans grown by the Joel Rivero family in the Sierra Nevada foothills of Puebla — big, meaty, and built for a thick, inky broth unlike any other bean we carry.

Ayocote Arcoiris is grown by Edgar Montes Silvestre and his brother Pedro using the ancient Milpa method — beans, corn, and squash planted together — in the volcanic highlands near Atlixco, Puebla.

We source both through our partnership with La Comandanta, a Mexican mission-based company working directly with small family farms to rescue ancestral bean varieties at risk of disappearing.

2 bags, 1 lb each, in 100% curbside recyclable standup pouches.

    Cooking Notes

Broth notes: medium-bodied, inky to chocolate brown

Pair with: garlic, cumin, roasted green chiles, avocado

Cooking Tips: Ayocote beans are big and meaty and benefit from a soak to cut down on cooking time. We recommend soaking 12–24 hours, then cooking low and slow on the stovetop in salted water for beans that hold their shape. Ayocotes are traditionally cooked with chiles and garlic. A pressure cooker will give you delicious Medianoche beans in much less time but WE DO NOT RECOMMEND COOKING ARCOIRIS IN A PRESSURE COOKER. Because of their varied sizes they will not cook at the same speed. We highly recommend taking the extra step of soaking in salted water (no baking soda) and cooking on the stovetop.

    About The Farm

Medianoche — The Joel Rivero Family

Joel Rivero farms a small plot in the Sierra Nevada foothills of Puebla, land that sat quiet for years before Joel and his stepfather decided to bring it back. They learned traditional farming methods from elders in their community and farm that way to this day — no synthetic fertilizers, no chemicals, no glyphosate. The Medianoche itself came about through experimentation — a seed mix that thrived on their specific land in a way no one else has been able to replicate.

Ayocote Arcoiris — Edgar Montes Silvestre & Pedro

Edgar Montes Silvestre and his brother Pedro farm in the volcanic highlands near Atlixco, Puebla, using Milpa — the ancient three sisters method Edgar learned from his grandfather, growing beans, corn, and squash together in the same field. It’s demanding work for a smaller harvest than a single-crop field would yield, but because Ayocotes are naturally resilient, the beans in this system need no added fertilizer or pesticide.

We partner with both families through La Comandanta, a Mexican mission-based company working directly with small family farms to rescue ancestral bean varieties at risk of disappearing.
