Tiger Eye Beans (organic)

These are some sexy heirloom beans! Our organic Tiger Eye heirloom beans are almost too stunning to cook—almost. But once you taste their silky, cream-like texture and rich flavor that makes ordinary pintos seem one-dimensional, you'll understand why South American farmers treasured these rare bean varieties for centuries.

When you cook these organic dried beans, those thin skins practically disappear, leaving the creamiest texture you've ever experienced. Earthy, nutty, with subtle sweetness that develops as they simmer—think of the best pinto you've had, then multiply it by ten.

These high protein beans pack 15 grams of plant-based protein per serving, plus fiber-rich nutrition for steady energy. Whether you're making the best beans for soups or gourmet bean dishes, these sustainably grown beans transform everyday meals into something special.

Grown in Idaho's Magic Valley by organic pioneer Mike Heath (featured in Michael Pollan's Botany of Desire), these premium dry beans thrive in the region's sandy soil and arid climate. Today, bean production is stewarded by Alvaro, Mike's trusted partner of 20+ years, who uses complex crop rotations and beneficial insects to nurture healthy, alive soil.

Fresh Beans = Last Year's Harvest! Don't worry—this is actually when beans are freshest. After fall harvest, they spend winter being carefully processed and are bagged fresh each spring. So 2024 beans in 2025 means peak freshness! We believe beans are best within 2 years of harvest (others say 3), ensuring you get the finest quality.

Love these beans

Tiger eye are my favorite and hard to find. Similar to cranberry beans. Smooth and creamy and quick to cook.

Creamy bean

Nice size creamy bean - did overnight soak and could have cooked less time 1 1/2 h in 325 degree oven (after 15 min simmer on stovetop). Think I will try and shorten soak time as some skins soaked off. Nice flavor and saved some broth for future soup.

Delicious and so pretty!

I love this variety! The beans are so pretty that my granddaughters kept a few as little treasures. And they are delicious, with a rich, flavorful broth. I’m going to order them again!
