    As part of our partnership with La Comandanta, we are delighted to offer this rare gem grown using the ancient Milpa technique of growing corn, beans, squash and chilis together. It is rare to find farms growing this way because it requires labor intensive hand harvesting. Carlos and Ana have a very rare certified organic farm still practicing Milpa farming. The care that they are giving to the land can be tasted in each delicious bite. This is the epitome of traditional farming and preserving cultural traditions, resulting in the most delicious and healthy beans you could find.

    Soooooo Good-BAYO BEANS!

    I’ve never had bayo beans before and I’m knew to making beans. I got the beans free from Foodacracy for earning purchasing points. I made a pot of bean without soaking first. Cooked the Rancho Gordo way and the primary beans way with: kombu, Caribbean bay leaf, large shallot, whole garlic cut in half, 1 arbol pepper…(brought pot of bean to full boil for 15 mins… then low simmer with lid half way on, checking in 25 mins intervals till done (apron. 1/12 hours. Then followed the Rancho Gordo Charro Beans recipe. I used a vegan bacon substitute. Delicious!!

    "Aaahhh..."some!

    I'm an old...umm...well seasoned home cook for dried beans and I enjoy stove top cooking in Dutch oven with presoak (about 10 hours) overnight to cook these Bayo beans. "Aaahhh..."some for the aroma of the beans as they simmer (I add only a shallot and a bay leaf in these) as well as the flavor of the pot likker and the finished beans. Pre-soaked (salt added to soak water), drained, in Emile Henry Dutch oven they are perfectly done in about 1hr 15min'ish in my kitchen. Bayo are the third variety of Primary Beans I've tried and it is a hat trick of excellence outcome each time.

    Finally got around to cooking the Bayo beans and used them to make the French Onion bean recipe. So delicious and when we reheated the leftovers, we added a bit more beef broth and some carmelized onion jam. Those beans stood up to it and were even more tasty the second time. Thanks for your help.
