White Sonora Berries

Since receiving the white Sonora berries we have used them at various times including as a hot cereal for breakfast, with fruit as add-ins for yogurt at lunch and instead of rice in a mushroom “risotto” at dinner. Because they take a while to cook, we make a batch and keep it in the fridge. So versatile, so yummy!

I think it's impossible to overcook these wheat berries. They maintain their individuality and pop even after 30 minutes and natural release in the Instant Pot. They are a positive flavor and texture addition to any soup and are flavorful enough as a side dish, especially sprinkled with olive oil or butter. The only downside I've noticed to the Hayden Flour Mills grains (I've tried the wheat berries and the blue barley) is that you MUST sort through them first to find the small rocks and chaff, which takes some time. No one likes to bite down on a rock! So, I only cook them on the weekends and eat the leftovers during the week. Enjoy!
