2025 HARVEST COMING SOON! - GET ON THE WAITLIST
This kidney-shaped bean is a rare regional gem and available this year for a limited time. It's an old favorite in pockets of Coastal California and Louisiana. We love its naturally varying, burgundy-and-cream skin tones and substantial size. Imagine if a kidney bean and a pinto bean had a baby and that's what it tastes like. It's creamy but holds it's shape with a nice earthy bean taste. We love it in chili of course, especially in the farmer's family recipe, but it's amazing in all kidney bean dishes like our red beans and rice. Enjoy its ham-like flavor and robust broth in soups, stews, and baked beans. *see cooking notes below.
At one time Speckled Bayo was grown in family gardens and small farms around the region but today it is in danger of dying out. Customers tell us their grandparents grew it and they thought they'd never see it again. Help us save this incredible heirloom bean that deserves a place on our plate and in our heart.
