Emmer faro, also known as Kavilca, is one most ancient wheat varieties on the planet. It was one of the first crops domesticated in the Near East. Like einkorn and spelt wheats, emmer is hulled wheat. On threshing, a hulled wheat spike breaks up into spikelets. These require milling or pounding to release the grains from the husks. Once cultivated widely in the ancient world, it is now almost extinct in the countries where it once flourished. Here in the U.S. very few growers are cultivating this heritage grain.
