I have rediscovered my love of beans through the Bean + Gran Club!
Two heirloom bean varieties and an accompanying grain broaden my legume horizons and provides many"complete protein" meals for the better part of a month. If the grain in the shipment isn't something I want, I can drop the grain and add an additional bean!
Having these bean varieties delivered to my door also means I can learn which varieties I enjoy the most. When I need more beans outside of the monthly shipment, I can order them a la carte from FOODOCRACY. It's a great and convenient way to have a steady supply of marvelous beans in my pantry.
There is also the added bonus of being able to add products from the website to the subscription box without increasing the shipping cost! I recently took advantage of this to add a short-term item to my shipment.

I used a bag of these beans to make "Doug Rodriguez's Black Bean Soup." The recipe came to me via the amazing cookbook, "Soup" by Barbara Kafka. I make a range of different Black Bean Soups based on my mood. The Doug Rodriguez recipe is perfect for Heirloom Beans. It's a short and simple list of ingredients that allows the beans to shine. And boy do these beans to that. They are velvety and tender, but hold their shape. They cooked relatively quickly, even for new crop beans. Delicious and delectable. Buy theses beans and seek out this soup recipe.
Delicious dried peppers full of flavor. A quick, light toasting releases deeper flavor. Highly recommended.

I used these in a vegetable noodle soup. These remained the perfect firmness and had a nice interior softness. I would highly recommend for any bean recipe.

These are so good that they really don't need too much. I cook them in regular packaged organic vegetable stock with an added piece of kombu. I always cook dried beans on medium high for 15 minutes and then I stir and turn the heat down to medium low. I cook till just about done. Toward the end I add a cube or 2 of Dort's frozen onion and one or 2 of frozen garlic. I'm lazy, but you can chop up your own if you wish. Stir well. I adjust with seasonings like shallot pepper and thyme salt but you can use plain pepper and salt and any seasonings you like., especially if you like your beans spicy which I don't. I let that simmer for 15 min. I serve with a generous sprinkling of shredded cheese. Ta Da. Honestly, loved by all and couldn't be easier.
Hearty and creamy, perfect for chili. I simmered the dry beans in a slow cooker along with chicken stock, bay leaves and kombu. After about 4 hours, I added other precooked beans, Fat Red Hominy (amazing!), cooked ground beef and spices. After another 4 or 5 hours, everything was cooked perfectly. We are so happy we discovered this company!
I've been consuming various versions of Mayocoba, Peruano, and Canary beans for years. And while there are distinctions between them as stated above, there are also similarities.
The bottom lime for me is, regardless of which variant I've had, these Paruano's are as good as any. Rich, creamy and full of flavor, even with the simplest preparation. I cooked my with a tablespoon of Penzey's Justice seasoning, 2 chopped garlic cloves, a bay leaf and a dried Pasilla pepper.
They were absolutely out of this world. I look forward to buying them again!
