    Our certified organic chickpeas are a special variety — smaller than the standard garbanzo bean but far more flavorful, with a rich, nutty depth that makes every dish they touch taste better. They cook up beautifully creamy, blending into exceptionally silky hummus while holding their shape in salads and long braises. Grown in Montana's Golden Triangle by Jeff Bangs of Prairie Sun Farms, these are a world apart from anything you'll find in a can. Try them simply dressed with good olive oil and flaky salt — they need very little else.

    Raised using regenerative practices — rotating crops with grains and integrating grazing animals to build soil health — these heirloom chickpeas are as good for the land as they are for your table.

    Cooking Notes

    Broth notes: light-bodied, delicate, fresh

    Pair with: fennel, dill, parsley, lemon, lamb, chicken and fish

    What to to make: Prepare simply with olive oil, lemon and parsley. Flageolet is excellent in soups and salads and in baked dishes like cassoulet.

    Cooking Tips: Our Chickpeas are very fresh and do not need to be soaked. The pressure cooker will give you delicious creamy beans in no time, perfect for busy nights. Soaking in salted water and cooking low and slow on the stovetop will yield the most consistent perfect results. Soaking cuts cooking time by about 30%. Times below are FROM DRY.
