This very special olive oil is only produced once per year from the new harvest. The Nuovo is bolder and more flavorful that EVOO, easily one of the best olive oils we've tasted. It has a fresh, intense taste with grassy notes and a peppery finish that make it amazing for dipping and drizzling.
The Olio Nuovo is highly anticipated all year long. Like a fine wine, it changes from year to year with each vintage having it's own special characteristics. After bottling the flavors and color will continue to develop over the course of several months. It is highly recommended that you use it with wild abandon when it is at it's freshest in the first 3-4 months and enjoy the culinary journey!
Estate olives grown on the tribal lands of the Yocha Dehe Winton Nation were harvested and delivered immediately to their world-class mill. While most new harvest oils are “settled” for several weeks before bottling, Olio Nuovo is bottled directly after milling. This gives the oil a special freshness that is best enjoyed within a few months after harvest.
