Speckled Bayo Beans - Limited Edition

This kidney-shaped bean is a rare regional gem and available this year for a limited time. It's an old favorite in pockets of Coastal California and Louisiana. We love its naturally varying, burgundy-and-cream skin tones and substantial size. Enjoy its ham-like flavor and robust broth in soups, stews, and baked beans.

At one time Speckled Bayo was grown in family gardens and small farms around the region but today it is in danger of dying out. With a flavor that many describe as bacon-y, it's unique and absolutely delicious. Customers tell us their grandparents grew it and they thought they'd never see it again. Help us save this incredible heirloom bean that deserves a place on our plate and in our heart.

What we have left of the 2023 harvest is all we will have until next year! These beans are still at their peak of freshness through November 2025. Grab them now before they're gone!

  • Grown by: Chris Capaul
  • Region: Sacramento Valley, California, USA
  • Harvested: October 2023

Speckled Bayo Heirloom Butter Beans

My goodness. The most amazing part of eating these beans. It reminded me of my Aunt Goldie cooking these in Arkansas. They are delicious and certainly my favorite.I have not had them in over sixty years. I can’t wait to order more. Happy to have found you online.♥️

These are my favorite

The flavor of these beans is unique and delicious. As a pescatarian, I sometimes miss the flavor of smoked meat. These beans fill that craving. They also make a most flavorful bean dip!

Speckled Bayo Beans

Delicious, tender and creamy with a lovely flavor. My Italian family used to grow them in Humboldt County and I’m so glad to know I can get them from you. They are a very special bean from my childhood memory. My Nonna, used to make large pots of vegetable bean soup the Italian way.
