These peas are enjoyed all over the south. I grow them in central Missouri. Traditionally seasoned with curry powder, carrot, onion and celery.
These little beans have a distinctly nutty, earthy taste that is deeply satisfying. Because they're small, they balance well with grains and chopped vegetables.
My only complaint is that there are no cooking instructions on the package, so I had to research that separately.
But even with that, I plan on making these a pantry staple from now on!
We used the Sea Island red peas in Hopping John for New Year’s Day. Absolutely wonderful with a fresh and slightly nutty taste.
