Cheers to spring! These light, bubbly craft cocktails are the perfect compliment to all those brunch gatherings and afternoon parties. Sure you could serve mimosas but what's the fun in that?

 

Girl Meets Dirt Lavender French 75

Lavender French 75 

YIELD

Serves 1

Ingredients:

3 tablespoons (1 1/2 ounces) gin

2 ½ tablespoons (1 ¼ ounce) Girl Meets Dirt Lemon Lavender Shrub

1 cup ice cubes

1/4 cup (2 ounces) dry sparkling wine, such as brut Champagne or Prosecco, chilled

Directions:

In cocktail shaker, combine gin and shrub. Add ice and shake vigorously for 20 seconds. Strain into chilled Champagne flute and top with sparkling wine.

Garnish drink with lemon twist or lavender sprig and serve immediately.

 

Bees Knees Cocktail Recipe

Gallberry Bees Knees

Ingredients

  • 3/4 oz. Gallberry Honey (warmed in some hot water)
  • 3/4 oz. Meyer lemon juice
  • 2 oz. Gin
  • Edible flowers or herbs for garnish (optional) 

Directions

Warm the honey until it is a thinner liquid that pours more easily.  This will allow it to incorporate into the drink without diluting. At Scratch Bar they do this in a Sous Vide immersion circulator but at home you can simply put honey in a glass jar, place the jar in a water bath, filling a pan with boiling water until it reaches most of the way up the sides of the jar. 

In a cocktail shaker combine the honey, lemon juice and gin.  Add a generous amount of ice, shake and then strain into a glass. Garnish with fresh herbs or edible flowers.

Maui Vanilla Mojito

Ingredients

  • 2 oz white rum
  • .5 oz Maui Vanilla Syrup
  • handful of fresh lime leaves
  • 1 oz fresh lime juice
  • sparkling water
  • Fresh limes and mint for garnish

Instructions

  1. Muddle the lime leaves with the rum in the bottom of a cocktail shaker.
  2. Add the vanilla syrup, lime juice, ice and shake.
  3. Pour over ice, top with sparkling water, garnish with a lime slices and additional mint leaves.

Spicy Peach Paloma

The best balance of peachy sweetness and the warmth of spice in the honey creates the perfect addition to your summer drink.

Ingredients

  • 1.5 oz tequila
  • 2.75 oz grapefruit juice
  • .5 ozRed Clay Spicy Peach Honey
  • .5 oz lime juice
  • 1 oz sparkling water
  • Grapefruit wedge for garnish

Instructions

  1. Combine the tequila and honey in the bottom of a cocktail shaker until the honey has dissolved.
  2. Add the grapefruit and lime juice and shake.
  3. Pour over ice in salt rimmed glass.
  4. Top with sparkling water, garnish with a peach wedge, and serve!
