Cheers to spring! These light, bubbly craft cocktails are the perfect compliment to all those brunch gatherings and afternoon parties. Sure you could serve mimosas but what's the fun in that?
YIELD
Serves 1
3 tablespoons (1 1/2 ounces) gin
2 ½ tablespoons (1 ¼ ounce) Girl Meets Dirt Lemon Lavender Shrub
1 cup ice cubes
1/4 cup (2 ounces) dry sparkling wine, such as brut Champagne or Prosecco, chilled
In cocktail shaker, combine gin and shrub. Add ice and shake vigorously for 20 seconds. Strain into chilled Champagne flute and top with sparkling wine.
Garnish drink with lemon twist or lavender sprig and serve immediately.
Warm the honey until it is a thinner liquid that pours more easily. This will allow it to incorporate into the drink without diluting. At Scratch Bar they do this in a Sous Vide immersion circulator but at home you can simply put honey in a glass jar, place the jar in a water bath, filling a pan with boiling water until it reaches most of the way up the sides of the jar.
In a cocktail shaker combine the honey, lemon juice and gin. Add a generous amount of ice, shake and then strain into a glass. Garnish with fresh herbs or edible flowers.
The best balance of peachy sweetness and the warmth of spice in the honey creates the perfect addition to your summer drink.
