These easy 2 ingredient chocolate nut butter cups are a sinfully delicious healthy alternative to peanut butter cups. They’re low carb and packed with so much good stuff you’ll be reaching for them no matter what diet you’re following.

This amazing nut butter is hand made by the ladies at Ground Up PDX. Their mission is to employ and empower women recovering from adversity in the Portland area. Each purchase helps transform women’s lives. Ground Up provides part time employment and training in everything from sales to working in a commercial kitchen space.

Note – you will need cupcake liners. We used silicone ones so that these cups are 0 waste but paper will work as well. If you are using paper liners you may need to put them in a muffin tin so that they keep their shape. Work quickly in batches before your chocolate hardens.

  1. Melt 1/2 of the the dark chocolate wafers in the microwave
  2. Spoon chocolate into the bottom of cupcake liners and place in them in the refrigerator to cool.
  3. Spoon nut butter on top of the hardened bottom chocolate layer.
  4. Melt the remaining chocolate wafers.
  5. Pour chocolate on top of the nut butter until it covers completely.
  6. Add a couple of flakes of sea salt (be careful to only add a few flakes or it will be too salty).
  7. Place the finished cups back in the refrigerator to set.
  8. Enjoy.
